Irish Soda Bread (March 2021)

Irish soda bread cut into four large sections
Ingredients:
2 Cups flour
5 TB sugar, divided
1 1/2 tsp baking powder
1 tsp salt
3/4 tsp baking soda
3 TB cold butter,  diced
1 Cup buttermilk
2/3 Cup raisins

Directions:
Preheat oven to 375 F
Coat 9″round cake pan with parchment paper

In large mixing bowl, mix flour, 4 TB sugar, baking powder, salt and baking soda. Add butter, with your fingers until mixture becomes a coarse meal.

Make a well in flour mixture and pour in buttermilk. Stir to blend. Stir in raisins and shape dough into ball with floured hands.

Transfer to baking pan and flatten slightly but not all the way to the edges of pan. Sprinkle remaining 1 TB sugar on top.

Bake for 40 minutes or until inserted toothpick comes out clean. Remove from oven and let sit for 10 minutes. Transfer to rack to complete cooling.

May be served warm or room temperature.
